Recipe: How to make cannabis-infused devilled eggs

Devilled eggs are a delightful way to elevate the classic staple of parties and picnics. The kitschy finger food isn’t just fun to eat, it also proves itself as an ideal delivery vehicle for a cannabis infusion.

This recipe incorporates a home-made cannabis-infused mayonnaise which can be made in advance and then whipped into the sunny yolk filling.

Our recipe is designed to be low dose* (approximately 10 mg THC in each bite-sized serving) though the results will depend on the potency of your infusion and can be adjusted accordingly.

How to make cannabis-infused devilled eggs

Ingredients

  • 6 eggs, room temperature
  • 2 tablespoons cannabis-infused mayonnaise
  • 4 tablespoons plain mayonnaise
  • 1 teaspoon Dijon Mustard
  • ½ teaspoon white Wine Vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Smoked Paprika
  • 1 shallot, very finely diced
  • ½ bunch chives, finely sliced

Tools

  • Sauce pot to boil eggs
  • Piping bag
  • Star tip
  • Cutting board
  • Knife

Directions

  1. Gently lower your eggs into a pot of boiling water, reduce the heat to medium, and simmer for 11 minute
  2. After 11 minutes, remove the eggs from the boiling water into an ice bath
  3. Peel the eggs and cut them in half lengthwise, cleaning your knife between each cut to maintain a clean presentation
  4. Cut a small slice out of the round side of the egg so they will stand upright when serving
  5. Remove the egg yolks and add to a mixing bowl, whisk them firmly to break them up and then add the mayonnaise, mustard, vinegar, salt and pepper
  6. Add the devilled egg filling to a piping back with a star tip and fill the eggs
  7. Garnish with smoked paprika, black pepper and optionally some finely diced shallots and chives

Yield: 12 devilled eggs

*Tips for dosing cannabis infusions

The potency of your infusions depends on many factors, from how long and hot it was cooked to the potency of your starting material. To test the potency of your finished product, try spreading ¼ or ½ teaspoon on a snack and see how that dose affects you after an hour. Decrease or increase dose as desired.
